Playing Catch-up: Meatless Monday

Meatless Monday is a non-profit initiative of The Monday Campaigns, in association with the Johns Hopkins’ Bloomberg School of Public Health. Our goal is to help reduce meat consumption 15% in order to improve personal health and the health of our planet.

Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.

Monday's Recipes include:

Cheesy Broccoli Frittata
Frittatas are an ideal opportunity to enjoy a quiche without the fat from the crust. Broccoli, potato and eggs are seasoned with paprika and blended with the distinct Jarlsberg cheese. 

Smokey Tempeh Pear Sandwiches
Tempeh bacon’s smokiness transfers to the hearty kale and is balanced with sweet roasted pear. Any homemade roasted garlic spread you have leftover can be deliciously reused on bread or in wraps. 

Creamy Tomato Gnocchi
These delicate puffs of pasta will fill your mouth with zesty tomato sauce. Cherry tomatoes get sweet when sautéed to round out this Italian medley. 

Banana Chocolate Cobbler
Bananas foster in a cobbler layered with dark chocolate. The caramelized bananas alongside desiccated coconut and topped with a crunch makes this dessert a textured treat.
