Meatless Monday

Meatless Monday is a non-profit initiative of The Monday Campaigns, in association with the Johns Hopkins’ Bloomberg School of Public Health. Our goal is to help reduce meat consumption 15% in order to improve personal health and the health of our planet.

Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.




It only took half-time during yesterday's NFL playoff game to prepare this delicious and healthy soup: Tomato Spinach Soup. This recipe is from Rachael Ray. Love her or hate her, I credit her for creating my interest in attempting to cook and giving me the confidence to move on to more difficult recipes. This is one of the first recipes I tried and continue to use it as my go-to recipe when I need something in a crunch. I won't reprint the recipe since I don't make changes. You may find it here.

Tofu a Bras
Here's a tofu twist on the classic Portuguese dish Bacallau à Bras. Imagine strips of tofu seasoned with garlic, onion and olives then cooked until crisp.

Throw sweet seasoned apples in a skillet with both infused rice and scrambled eggs and enjoy this dish any time of day.

Creamed Parsnips with Spinach
In this quintessential side dish, parsnips and spinach are cooked together until tender, then sprinkled with nutmeg.
