Meatless Monday is a non-profit initiative of The Monday Campaigns, in association with the Johns Hopkins’ Bloomberg School of Public Health. Our goal is to help reduce meat consumption 15% in order to improve personal health and the health of our planet.Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.
Pasta with Roasted Sweet Potato and Spinach
This recipe idea came from Pam at sidewalk shoes. See her blog entry and recipe here. Not only tasty, this is a nutritious meal that includes the benefits of spinach and sweet potatoes. It is a good source of carbohydrates, vitamin A (in the form of beta-carotene), vitamin C, dietary fiber, non-heme iron, and calcium, and is low in fat. If prepared again, I might choose to wilt the spinach and mix within the dish versus using the raw spinach.Healthy Eating!

I'm glad you liked it! Yeah I agree, next time I might toss the hot pasta with the spinach to cook it a bit first.
Pam - I did like it. The raw spinach was actually ideal for my (cold) leftovers at lunch. I feel so healthy eating it, too:)
Wow, that looks really good. I am not a big fan of meat, but every time that I cook something meatless my husband thinks it is not a complete meal and has to add chicken or tuna. This looks great, I think I'll give it a try!
Hi Carly - It is quite good. I had cold leftovers today for lunch and I liked it even better. I think a small portion of meat could be added with this as a side dish. Thanks for taking time to comment.
