Egocentric Squared (or what I did Monday night)

I didn't receive a 'Ten on Tuesday' subject this week so I was desperately seeking a  post. Rain and distance kept me from attending the annual Holiday Film Series at the Alabama Theatre in Birmingham where I had wanted to see Christmas Story so that was out.

However, I'm glad I stayed home because I watched something much, much better. On Sunday night, I recorded The People Speak.  Here is the History Channel's description:

THE PEOPLE SPEAK is a documentary film inspired by the books, "A People's History of the United States" and "Voices of a People's History" which chronicles the lives and experiences of ordinary Americans who, through their words and actions, changed the course of our history.

The philosophy espoused is that change doesn't come from the top, but rather from the bottom, and that without those everyday citizens pushing for betterment, there would be no America. This film takes us on a journey from the founding of our country to the civil rights movement, all the way up through today.

While watching this inspiring documentary, I enjoyed lentils with bacon. Yes, it is Meatless Monday;
remember this is my Ten on Tuesday post! I found the Lentils with Bacon recipe at The Amateur Gourmet. The pictures there are great; I'm not much of a food stylist.

I used brown lentils that did not have to be soaked and followed the cooking instructions on the package. I didn't have a red onion so used a sweet onion instead. Otherwise, I followed the recipe as outlined, and it was so good that I had a second bowl. Save some the cooking liquid, however, as it does have a tendency to dry out. That will be useful if you want to reheat leftovers.

Tuesday morning: Office Christmas breakfast (still hoping for that Christmas bonus)

Happy Tuesday!

Pam - Thanks! It appears promising for tomorrow, while simulatenously charging more for medical insurance premiums and freezing/possibly terminating our 401K. Pass the tequila!:(
