Show Me Your Refrigerator

The Huffington Post hosted a Clean Out Your Refrigerator Day last week and asked readers to send photos. You may view all the disgusting, unrecognizable foods at the slideshow here.  Here's mine from tonight:

This is my second post showing the contents of my apartment-sized refrigerator (first post here).  It may be messy but I can recognize everything; however, I confess this is where a lot of foods go to die when they should go in the garbage!

Yes. I'm aware that I have a dozen Publix reuseable grocery bags but I didn't have this bag. Now I do.

One quick and easy meal I like to prepare using whatever is available is roasted vegetables - a sweet potato here, a couple of Yukon gold potatoes there, peppers, red onion, and whole garlic...whatever. The only prep is to cut in bite-sized pieces, drizzle with olive oil, and season with salt and freshly ground pepper. Aren't the colors luscious (she says, in her best Nigella Lawson voice)?

Don't you love my new penguin salt and pepper shakers?! I hate to name drop but...Jonathan Adler. This was a recent birthday gift from my lifelong friend, Sheila (i.e., Moose). LOVE THEM!

After baking at 375 degrees for 55 minutes, I sliced the one-quarter block of extra-sharp white cheddar cheese I had available over the top and placed back in the oven on broil until melted. No. I don't routinely eat off a cutting board. I moved to the sofa so I could catch Sunday Night Football.  Let me just say, this was delicious. I especially enjoyed the roasted garlic, which I left whole.

Now. What's in your refrigerator and what do you do with your leftovers? I showed you mine so show me yours. This recipe will also be available for Meatless Monday.
