Meatless Monday

Meatless Monday is a non-profit initiative of The Monday Campaigns, in association with the Johns Hopkins’ Bloomberg School of Public Health. Our goal is to help reduce meat consumption 15% in order to improve personal health and the health of our planet.

Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.

Highlighted recipes on this week's Meatless Monday website include:

Blueberry Brainiac Smoothie
This breakfast blend is a great way to get energized with blueberries and seeds  before a demanding day.  

Mushroom Pepper Hoagies
These veggie hoagies can be topped with lettuce and tomato or served straight out of the microwave, warm and gooey. 

Cranberry Almond Stuffed Squash
The squash's thick shell, used as an innovative serving bowl, dresses up the cranberries and mushrooms and truly makes an Autumn delight. 

Sweet Bean Ricotta Bake
Red beans and ricotta cheese layer beautifully with molasses and brown sugar to bridge the gap between savory and sweet. 


Prepared last night with leftovers for today, I chose a Homemade Kraft-style Stovetop Mac and Cheese in my attempt for 'comfort food' (photo and recipe by Partysugar at Yumsugar), plus I had all the ingredients without a grocery store run.

Needless to say, I didn't grow up on Kraft-style Mac and Cheese; I grew up on my mother's homemade mac and cheese so I was disappointed overall in the taste (or lack thereof), but it was easy to prepare. For more flavor, I added extra shots of hot sauce.  I probably won't prepare this again but, for those under age 30, you'll love it!
